Don’t you just love recipes that allow you use leftovers to create a whole new dish? Most people get tired of eating the same thing night after night for several meals, so this is an easy way to use what you’ve got without being bored. Take leftover chicken, for instance. It’s great in soups, casseroles, nachos, quesadillas and so much more. In fact, it often tastes better the next day or two after it’s made, so that’s a win-win for everyone!
Although this recipe calls for chopped chicken, you can certainly use shredded chicken if you have some. Or if you bought a rotisserie chicken during your last trip to the store, pull that meat off the bones and toss it into this soup! We’ve used chicken breast, thighs, drumsticks and wing meat before to make it, and it’s good in any form. Honestly… the dark chicken might be a little better. Just sayin’.
Easy Chicken Gumbo Soup
Yield 6 servings
This easy chicken gumbo recipe is the perfect weeknight meal when you're craving a hot bowl of soup. It's ready in just 45 minutes, or under 20 if you're using minute rice!
Heat broth to boiling.
Add tomatoes, onion, celery, okra, rice, chicken and salt and pepper to the broth.
Cover and simmer about 30-40 minutes, until rice is done and veggies are tender.
Season to taste.

If you have turkey on hand, it’s absolutely fabulous in this recipe, too.
Minute rice can save you a lot of time. This can be prepared in as little as 20 minutes with minute rice, but I just don’t keep it on hand. We prefer brown rice or wild rice, both of which are very tasty in this dish.
Don’t be afraid to go heavier on the celery if you like it. My guys aren’t huge fans of celery, so I just use a stalk, but I love the flavor and would add another if this chicken gumbo soup were made just for me.
