This easy chicken gumbo recipe is the perfect weeknight meal when you're craving a hot bowl of soup. It's ready in just 45 minutes, or under 20 if you're using minute rice!

Heat broth to boiling.

Add tomatoes, onion, celery, okra, rice, chicken and salt and pepper to the broth.

Cover and simmer about 30-40 minutes, until rice is done and veggies are tender.

Season to taste.
